  1. Prepare Brown Butter: Melt unsalted butter in a pan over medium heat, stirring often until amber and nutty, about 5-7 minutes. Reserve 2 tbsp in a bowl to cool.
  2. Reduce Apple Cider: Simmer 1 cup apple cider in a saucepan for about 15 minutes until reduced to ¼ cup.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine Wet Ingredients: Mix cooled brown butter, reduced cider, brown sugar, granulated sugar, egg, vanilla extract, and apple sauce until smooth.
  5. Incorporate Dry Ingredients: Gradually fold dry ingredients into the wet mixture until just combined.
  6. Chill Dough: Cover dough with wrap and chill for at least 30 minutes. Preheat oven to 350°F and prepare baking sheets.
  7. Shape Cookies: Scoop dough onto sheets, spacing about 2 inches apart.
