  • 1 sheet Puff Pastry Store-bought for convenience.
  • 1 large Egg For brushing on crust.
For the Filling
  • 1 tablespoon Fresh Thyme Dried thyme can be used; halve the amount.
  • 1 cup Gruyere Cheese Grated, can substitute with Swiss or fontina.
  • 1 bunch Asparagus Trim tough ends before using.
For Assembly
  • 2 tablespoons Olive Oil Can also use melted butter.
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Roll out the puff pastry on a lightly floured surface until it measures approximately 11 x 9 inches. Trim to a rectangle of 11 x 7 inches.
  2. Brush the edges of the rectangular pastry with beaten egg. Attach pastry strips vertically along the edges.
  3. Prick the center lightly with a fork to prevent it from puffing during baking.
  4. Sprinkle fresh thyme leaves evenly over the base of the tart crust. Add grated gruyere cheese.
  5. Cut asparagus to fit and arrange on top of cheese. Drizzle with olive oil and season with salt and pepper.
  6. Preheat oven to 400°F (200°C). Brush edges with remaining beaten egg and bake for 20-25 minutes.

Notes

You can prepare the tart crust and fillings in advance. Store separately in the fridge. Avoid soggy pastry by pricking the bottom of the tart base before baking.
