  • 3 large Parsnips cut into long strips
  • 12 oz Asparagus trimmed
  • 12 slices Thick Cut Bacon or prosciutto
Maple Glaze
  • 1/2 cup Pure Maple Syrup high quality
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Ground Cumin
  • 1 tsp Ground Ginger

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with foil or parchment paper.
  2. Trim the tough ends off the asparagus and cut your carrots and parsnips into long strips for even cooking.
  3. Create bundles by grouping three asparagus spears, three carrot strips, and three parsnip strips together. Wrap with a slice of bacon.
  4. Sprinkle salt and black pepper over the bundles for seasoning.
  5. Roast the bundles in the oven for 20 minutes until the bacon crisps and the vegetables soften.
  6. While roasting, whisk together maple syrup, apple cider vinegar, cumin, ginger, and salt in a bowl.
  7. Drizzle the glaze over each bundle and return to oven for an additional 5 minutes to caramelize.
  8. Remove from oven, let cool for a minute, and serve warm.
