  • 1 teaspoon Salt
  • 1 teaspoon Fresh Ground Pepper
For the Finish
  • 2 tablespoons Scallions Chopped
  • 1 can Olive Oil Cooking Spray Prevents sticking

Method
 

Step-by-Step Instructions
  1. Prep the asparagus by rinsing under cool water, then trimming the woody ends off. Toss with olive oil, garlic powder, salt, and pepper.
  2. Cut chicken breasts into strips. In a bag, coat the strips with a beaten egg.
  3. Store each item in their respective bags or containers in the fridge.
  4. Preheat your oven to 400°F and spray a baking sheet with olive oil cooking spray.
  5. Coat the chicken strips in the Parmesan-breadcrumb mixture and place them on the baking sheet.
  6. Bake the chicken for about 15 minutes until golden brown, flipping halfway.
  7. Add seasoned asparagus to the baking sheet and sprinkle with scallions. Bake for an additional 15 minutes.
  8. Check that the chicken is cooked through. Let sit for a few minutes before serving.
