  • 4 Large Eggs Use room temperature for better results.
  • 1 cup Feta Cheese Can use block feta or goat cheese.
For the Garnish
  • 1/4 cup Fresh Herbs (Oregano/Thyme/Basil) Dried herbs can be used as a substitute.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. On a baking sheet, toss halved cherry tomatoes with a drizzle of olive oil and roast for about 10 minutes.
  3. While the tomatoes roast, heat a skillet over medium heat, add olive oil, and sauté spinach for 2-3 minutes with salt and black pepper.
  4. In a round baking dish, layer the roasted cherry tomatoes and sautéed spinach evenly.
  5. Make small wells in the vegetable base and crack the eggs into each well.
  6. Sprinkle crumbled feta cheese over the assembled dish.
  7. Bake in the oven for 12-15 minutes, until whites are firm and yolks are runny.
  8. Garnish with fresh herbs and serve immediately.
