Ingredients
  

For the Potatoes
  • 1.5 lbs Baby Potatoes halved
  • 3 tbsp Olive Oil can be swapped with avocado oil
  • 1 tsp Dried Oregano or use fresh oregano
  • 1 tsp Garlic Powder or fresh minced garlic
  • 1/2 tsp Salt adjust to taste
  • 1/2 tsp Black Pepper adjust to taste
For the Feta
  • 200 g Block Feta Cheese can use crumbled feta
Optional Additions
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Kalamata Olives or preferred type
  • Fresh Basil or Parsley for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, toss halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and black pepper until well coated.
  3. Spread the seasoned potatoes evenly on the prepared baking sheet and place the block of feta cheese in the center.
  4. Scatter halved cherry tomatoes around the feta, drizzle with additional olive oil if desired.
  5. Bake in the preheated oven for 30–35 minutes until golden and fork-tender.
  6. Remove from oven, optionally drizzle with fresh lemon juice, and garnish with fresh basil or parsley before serving.
