- Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, toss halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and black pepper until well coated.
- Spread the seasoned potatoes evenly on the prepared baking sheet and place the block of feta cheese in the center.
- Scatter halved cherry tomatoes around the feta, drizzle with additional olive oil if desired.
- Bake in the preheated oven for 30–35 minutes until golden and fork-tender.
- Remove from oven, optionally drizzle with fresh lemon juice, and garnish with fresh basil or parsley before serving.
