  • 200 g Feta Cheese block; goat cheese can be substituted.

Optional Additions
  • 1 cup Cherry Tomatoes halved; can be omitted or substituted with sundried tomatoes.
  • 0.25 cup Kalamata Olives pitted; can be omitted.
  • Fresh Basil or Parsley for garnish.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and black pepper in a mixing bowl.
  3. Spread the seasoned potatoes on the baking sheet, creating space in the center for a block of feta cheese.
  4. If desired, scatter cherry tomatoes and Kalamata olives around the potatoes and drizzle more olive oil over the feta.
  5. Bake in the preheated oven for 30–35 minutes until golden brown and tender.
  6. Remove from oven, drizzle with fresh lemon juice, and garnish with basil or parsley.
