Step-by-Step Instructions
  1. Make Coleslaw: In a large mixing bowl, combine the thinly sliced cabbage, scallions, and optional cilantro. Add Kewpie mayonnaise, sour cream, and lime juice. Toss together until well-coated and season with salt and pepper to taste.
  2. Prepare Bang Bang Sauce: In a separate bowl, whisk together Kewpie mayonnaise, Thai sweet chili sauce, and sriracha until smooth.
  3. Prepare Shrimp: Pat shrimp dry, season with salt and pepper, and coat in buttermilk.
  4. Heat Oil: In a deep frying pan, pour enough vegetable oil to reach about 2 inches deep and heat to 350-365°F.
  5. Coat Shrimp: Toss shrimp in cornstarch until evenly coated.
  6. Fry Shrimp: Add shrimp to hot oil in batches, frying for about 4-5 minutes until golden brown.
  7. Assemble Tacos: Place crispy shrimp on tortillas, top with slaw, drizzle with bang bang sauce, and finish with lime juice.
