Pesto

  • 1/4 cup dark roasted sesame seed oil Rich, nutty base; olive oil works too.
  • 1/2 cup groundnuts (peanuts) Contributes creaminess; walnuts or cashews can be used.
Meatballs
  • 1 pound minced beef Main protein; ground turkey or chicken is leaner.
  • 1 teaspoon dried thyme Adjust according to taste.
  • 1 teaspoon cumin Adjust according to taste.
  • 1 teaspoon onion powder Enhances flavor; fresh onion can be a substitute.
  • 1 teaspoon chili Chopped chili can be used for a punch.
  • 2 cloves garlic Provides aromatic richness.
  • 1/4 cup ketchup Creates sticky sauce.
  • 2 tablespoons brown sugar Essential for the sweet sticky sauce.
Assembly
  • 1 cup mozzarella Melts beautifully over meatballs.
  • 4 sub buns Perfect vehicle for the sandwich.
  • 1 cup kachumbari Fresh salad for added crunch; pico de gallo can substitute.

Method
 

Instructions
  1. In a food processor, combine basil, cilantro, lemon juice, sesame oil, groundnuts, and a pinch of salt and pepper. Blend until smooth.
  2. In a large mixing bowl, combine minced beef, thyme, cumin, onion powder, chili, and garlic. Roll mixture into small balls.
  3. Heat a skillet over medium-high heat and add oil. Place meatballs in the skillet and sear for about 3 minutes.
  4. Pour in ketchup and sprinkle brown sugar over the meatballs. Stir gently and cook for an additional 3 to 5 minutes.
  5. Prepare sub buns by slicing and buttering. Spread pesto, add kachumbari then layer sticky meatballs and sprinkle mozzarella.
  6. Preheat oven to 170°C (340°F). Bake sandwiches on a baking sheet for 3 to 5 minutes until cheese is melted.
