Cooking Steps
- Preheat your oven to 400°F (200°C). Wash and dry 4 medium sweet potatoes, then pierce each potato with a fork several times.
- Bake the sweet potatoes for about 45-60 minutes, until tender and the skin looks crispy.
- In a slow cooker, place 2 pounds of chicken breasts with a pinch of salt and enough water to submerge. Cook on low for 4-5 hours until tender.
- After cooking, shred the chicken in the slow cooker and mix in 1 cup of barbecue sauce until fully coated.
- When the sweet potatoes are ready, remove them and cut a slit down the center. Spoon the barbecue chicken mixture into each potato.
- Add toppings of your choice, such as jalapeños, raw red onion, or cole slaw, and serve warm.

Notes
Use high-quality barbecue sauce for the best flavor. Choose medium-sized sweet potatoes for even cooking. Warm leftover chicken slightly to make shredding easier.
