  • 2 medium Sweet Potatoes roast until tender
  • 1 pound Chicken Breasts skinless, boneless
  • 1/2 cup BBQ Sauce your favorite or homemade
  • 2 tablespoons Olive Oil for roasting veggies
For the Toppings
  • 1 medium Avocado slice right before serving
  • 2 stalks Green Onions or red onions
  • 1/4 cup Cilantro omit if not a fan
  • 2 wedges Lime for serving

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  2. Season chicken tenders with olive oil and your favorite chicken rub. Air fry at 400°F (200°C) for 4 minutes, then brush with BBQ sauce. Cook for another 3-4 minutes until fully cooked.
  3. In another bowl, mix 1 cup of coleslaw cabbage mix, 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice or apple cider vinegar, and sweetener to taste.
  4. Assemble your bowl by layering coleslaw, roasted sweet potatoes, and sliced BBQ chicken.
  5. Garnish with optional avocado, cilantro, or pumpkin seeds.
