Preparation Steps
- Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Season chicken tenders with olive oil and your favorite chicken rub. Air fry at 400°F (200°C) for 4 minutes, then brush with BBQ sauce. Cook for another 3-4 minutes until fully cooked.
- In another bowl, mix 1 cup of coleslaw cabbage mix, 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice or apple cider vinegar, and sweetener to taste.
