- In a blender, combine fresh blackberries, balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme. Blend until smooth and vibrant, then strain the mixture through a fine sieve to remove seeds for a silky dressing.
- Reserve about two-thirds of the strained blackberry mixture for dressing later. Place the boneless, skinless chicken breasts in a shallow dish and pour the remaining marinade over them. Cover and refrigerate for at least 30 minutes, or ideally, overnight.
- Preheat your grill to medium heat, around 350°F (175°C). Remove the chicken from the marinade, allowing excess marinade to drip off, and place it on the grill. Cook for about 20 to 25 minutes, flipping occasionally, until fully cooked.
- While the chicken is resting, divide the arugula and torn basil leaves among individual serving bowls. Slice the grilled chicken into strips and arrange it atop the greens. Add sliced avocado, fresh blackberries, and optional pumpkin seeds.
