Ingredients

For the Salad
  • 4 pieces Boneless Skinless Chicken Breasts Provides lean protein; ensure it's fresh for better flavor.
  • 1 cup Fresh Blackberries Adds natural sweetness and tartness; can use frozen if fresh are unavailable.
  • 1 cup Torn Basil Leaves Adds freshness and aroma; use fresh basil for the best flavor.
  • 4 cups Arugula Offers a peppery bite; can replace with spinach for a milder taste.
  • 1 piece Ripe Avocado Provides creaminess and healthy fats; substitute with crumbled feta for a different texture.
  • 1/4 cup Toasted Pumpkin Seeds Optional; adds crunch and nuttiness; can swap for sunflower seeds or omit entirely.
For the Marinade and Vinaigrette
  • 1/4 cup Balsamic Vinegar Contributes acidity; substitute with apple cider vinegar for a different flavor.
  • 1/2 cup Olive Oil Delivers richness; can replace with avocado oil.
  • 2 tablespoons Honey Adds sweetness; maple syrup is a vegan alternative.
  • 1 tablespoon Dijon Mustard Enhances flavor; use yellow mustard if Dijon is unavailable.
  • 1 teaspoon Fresh or Dried Thyme Provides herbal notes; substitute with oregano or Italian seasoning.
  • 1 teaspoon Salt Enhances overall flavors; adjust according to taste.

Equipment

  • blender
  • Grill
  • shallow dish
  • fine sieve

Method

Step-by-Step Instructions
  1. In a blender, combine fresh blackberries, balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme. Blend until smooth and vibrant, then strain the mixture through a fine sieve to remove seeds for a silky dressing.
  2. Reserve about two-thirds of the strained blackberry mixture for dressing later. Place the boneless, skinless chicken breasts in a shallow dish and pour the remaining marinade over them. Cover and refrigerate for at least 30 minutes, or ideally, overnight.
  3. Preheat your grill to medium heat, around 350°F (175°C). Remove the chicken from the marinade, allowing excess marinade to drip off, and place it on the grill. Cook for about 20 to 25 minutes, flipping occasionally, until fully cooked.
  4. While the chicken is resting, divide the arugula and torn basil leaves among individual serving bowls. Slice the grilled chicken into strips and arrange it atop the greens. Add sliced avocado, fresh blackberries, and optional pumpkin seeds.
  5. Drizzle the reserved blackberry dressing over the assembled salad right before serving, ensuring each bite is flavorful. Toss gently to coat the salad evenly without bruising the greens.
