  • 1 cup cottage cheese
  • 1/2 cup cream cheese softened
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 1/4 teaspoon salt

Method

  1. In a large mixing bowl, combine the rolled oats, cottage cheese, cream cheese, protein powder, honey, vanilla extract, and salt. Mix until well combined and smooth.
  2. Gently fold in the fresh blueberries, being careful not to crush them.
  3. Refrigerate the mixture for about 30 minutes to make it easier to handle.
  4. Once chilled, use your hands to form small balls, about 1 inch in diameter.
  5. Roll each ball in the crushed graham crackers to coat.
  6. Place the protein bites on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to firm up.
  7. Serve chilled or store in an airtight container in the refrigerator for up to one week.
