Step-by-Step Instructions for Crispy Blueberry Grilled Cheese
- In a medium saucepan, combine fresh blueberries, white sugar, lemon juice, and chopped lemon thyme. Heat over medium-high heat until boiling. Reduce heat to low and simmer for about 20 minutes until thickened. Allow to cool.
- Spread cooled blueberry compote on one side of each slice of bread. Layer shredded white cheddar and mozzarella cheese on top, then place another slice of bread on top to form a sandwich.
- Melt butter in a skillet over medium heat. Cook the assembled sandwich for 2-3 minutes on one side until golden brown. Flip and cook for another 2-3 minutes until the other side is golden and cheese is melted.
