  • 2 cups carrots diced
  • 2 cups celery diced
  • 1 cup onion chopped
  • 4 cloves garlic minced
  • 2 teaspoons thyme fresh or dried
  • 2 leaves bay leaves
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste

Steps
  1. Brown the chicken in a large pot over medium-high heat for 5-7 minutes per side until golden brown.
  2. Sauté the chopped onions, minced garlic, diced carrots, and celery for 5-7 minutes until fragrant.
  3. Add the bone broth and herbs, bring to a boil, then reduce to low and simmer for 30-40 minutes.
  4. Remove the chicken, shred the meat, and return it to the pot.
  5. Simmer for an additional 10 minutes, then adjust seasoning before serving.
