  • 2 6-ounce salmon fillets
  • 1 cup fresh peaches diced
  • 1/4 cup bourbon
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a medium bowl, combine the diced peaches, bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, garlic powder, salt, and black pepper. Mix well until the sugar is dissolved and the ingredients are fully incorporated.
  3. Place the salmon fillets on the prepared baking sheet, skin-side down. Pour the peach bourbon glaze over the salmon, ensuring it is well coated.
  4. Roast the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Remove the salmon from the oven and let it rest for a few minutes. Drizzle any remaining glaze from the baking sheet over the top before serving.
  6. Garnish with fresh parsley and serve with your choice of sides, such as rice or steamed vegetables.
