Place the salmon fillets on the prepared baking sheet, skin-side down. Pour the peach bourbon glaze over the salmon, ensuring it is well coated.
Roast the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove the salmon from the oven and let it rest for a few minutes. Drizzle any remaining glaze from the baking sheet over the top before serving.
