Method
 

Cooking Instructions
  1. Preheat the broiler to high and ensure the oven rack is 6 inches from the heating element.
  2. In a skillet, heat ½ teaspoon of dark sesame oil, then add minced ginger, minced garlic, diced red bell pepper, and chopped scallions. Sauté for 1 minute.
  3. Stir in curry powder, red curry paste, and ground cumin into the vegetable mixture and cook for an additional minute.
  4. Pour in low-sodium soy sauce, brown sugar, Asian fish sauce, and light coconut milk, then stir and let simmer.
  5. Brush tilapia fillets with dark sesame oil and season with salt.
  6. Place tilapia on a greased baking sheet and broil for 6 to 7 minutes, until fish flakes easily.
  7. Remove from oven and layer fillets with the coconut curry sauce. Serve with jasmine rice and garnish with cilantro and lime wedges.
