- Preheat the broiler to high and ensure the oven rack is 6 inches from the heating element.
- In a skillet, heat ½ teaspoon of dark sesame oil, then add minced ginger, minced garlic, diced red bell pepper, and chopped scallions. Sauté for 1 minute.
- Stir in curry powder, red curry paste, and ground cumin into the vegetable mixture and cook for an additional minute.
- Pour in low-sodium soy sauce, brown sugar, Asian fish sauce, and light coconut milk, then stir and let simmer.
- Brush tilapia fillets with dark sesame oil and season with salt.
- Place tilapia on a greased baking sheet and broil for 6 to 7 minutes, until fish flakes easily.
- Remove from oven and layer fillets with the coconut curry sauce. Serve with jasmine rice and garnish with cilantro and lime wedges.
