Step-by-Step Instructions for Apricot Crumb Bars
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a medium mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs. Add beaten egg and stir until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
  5. In a separate bowl, mix diced apricots, sugar, cornstarch, cinnamon, vanilla extract, and lemon juice until combined.
  6. Pour the apricot mixture over the prepared crust and spread it evenly.
  7. Combine the remaining crumb mixture with sliced almonds and sprinkle it over the apricot filling.
  8. Bake for 45-50 minutes until golden brown and the filling is bubbling.
