- Measure out 8 cups of Rice Chex into a large mixing bowl and line a baking sheet with parchment paper.
- Crush the apple chips in a ziplock bag until you have small bits, then set aside.
- In a microwave-safe bowl, combine 1 cup of white chocolate chips, 1 cup of caramel bits, and 2 tablespoons of butter, microwave in 30-second intervals until melted.
- Pour the melted mixture over the Rice Chex and gently fold to coat well.
- In a large ziplock bag, combine 1 cup of powdered sugar, ½ cup of granulated sugar, and 1 teaspoon of apple pie spice. Add the coated cereal and shake to coat.
- Spread the mixture on the baking sheet and sprinkle with crushed apple chips. Allow to set for 10-15 minutes.
