Step-by-Step Instructions
  1. Prepare the broth by heating it gently in a medium saucepan, keeping it warm throughout the cooking process.
  2. Cook the diced bacon in a large sauté pan with olive oil until crispy and golden (5-7 minutes). Remove and set aside, leaving the fat.
  3. Sauté chopped shallots in the bacon fat until soft and translucent (1-2 minutes).
  4. Add minced garlic and cook until fragrant (about 1 minute), then stir in Arborio rice and toast for 2-3 minutes.
  5. Deglaze with dry white wine, allowing it to bubble and reduce (1-2 minutes) until mostly absorbed.
  6. Incorporate the warm broth one ladleful at a time, stirring consistently until absorbed. This takes about 20-25 minutes.
  7. Fold in caramelized onions and crispy bacon once rice is creamy and slightly tender.
  8. Stir in freshly grated Parmesan cheese and unsalted butter, mixing until melted and creamy. Season with salt and pepper.
