  • 1 sheet Puff Pastry store-bought or homemade
For the Filling
  • 1 medium Butternut Squash or other winter squashes
  • 2 medium Onions yellow or sweet onions
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Thyme fresh or dried
  • 4 ounces Goat Cheese or feta cheese
  • 1/4 cup Heavy Cream or dairy-free alternative
  • 1 large Egg for egg wash
  • 1/4 teaspoon Red Pepper Flakes optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced butternut squash with olive oil, salt, and black pepper and roast for 25-30 minutes.
  3. In a skillet, heat olive oil and sauté thinly sliced onions for 20 minutes until caramelized.
  4. Roll out puff pastry and fit into a tart pan, pricking the bottom with a fork.
  5. Spread caramelized onions over the pastry, layer roasted butternut squash and crumbled goat cheese, drizzle with cream and sprinkle thyme.
  6. Bake for 25-30 minutes until the pastry is golden brown.
  7. Allow the tart to cool for 10 minutes before slicing and serving.
