Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or nonstick baking spray.
- In a large mixing bowl, combine all dry ingredients and whisk until evenly blended.
- In a separate bowl, whisk together the wet ingredients until smooth.
- Gradually add the dry ingredients to the wet mixture, folding gently until no dry flour remains.
- Fold in the freshly grated carrots and chopped pecans or walnuts.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool in their pans for about 15 minutes before transferring to wire racks.
- Prepare the salted caramel sauce by combining sugar and water in a saucepan. Heat until the syrup turns a deep amber color.
- Pour in the warmed heavy whipping cream, stirring until smooth. Add butter and flaky sea salt.
- In another bowl, beat together the cream cheese and butter until smooth. Gradually add powdered sugar.
- Assemble the cake by layering the first cake, frosting, and drizzling with caramel, then top with the second layer.
- Frost the entire cake, chill, and pour on the remaining salted caramel.
- Decorate with chopped toasted pecans and sea salt.
- Refrigerate for at least 1 hour before serving and enjoy!

Notes
Keep the cake moist by using freshly grated carrots. Don’t overmix the batter to ensure tenderness.
