Ingredients
  

  • 4 slices of whole grain bread
  • 4 ounces of sharp cheddar cheese grated
  • 4 ounces of softened cream cheese
  • 4 large eggs
  • 2 tablespoons of olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: 1 ripe avocado sliced
  • Optional: Sriracha sauce for drizzling

Method
 

  1. In a mixing bowl, blend the softened cream cheese with a dash of salt and pepper until creamy and well combined.
  2. Generously spread the cream cheese mixture on two slices of whole grain bread.
  3. Sprinkle the grated cheddar cheese over the cream cheese, then top with the remaining slices of bread to create two sandwiches.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  5. Carefully place the sandwiches in the skillet and cook for about 3-4 minutes, pressing down gently until they are golden brown.
  6. Flip the sandwiches, adding the remaining tablespoon of olive oil to the skillet. Cook for an additional 3-4 minutes until the other side is crispy and the cheese is melted.
  7. While the sandwiches are cooking, crack the eggs into a separate pan and cook them to your liking (poached or scrambled works beautifully).
  8. Once the sandwiches are golden and crispy, remove them from the skillet and slice them diagonally.
  9. Top each sandwich with a cooked egg and add avocado slices if desired. Drizzle with Sriracha sauce for an extra kick.
