Preparation Instructions
- Cook the Bacon: Sauté finely chopped bacon in a medium skillet over medium heat for about 2-3 minutes until crispy. Remove and set aside to drain on paper towel.
- Prepare the Filling: In a medium saucepan, melt butter, add flour and cook until golden. Gradually whisk in milk, then bacon, gouda, chives, mustard, salt, and pepper. Allow to cool slightly.
- Roll Out the Pastry: On a floured surface, roll out puff pastry into a rectangle about 1/8 inch thick and cut into strips 1 inch wide. Brush with melted butter.
- Form the Pastry Cones: Wrap pastry strips around inverted cones, sealing edges with water. Arrange upright in a baking pan.
- Bake the Pastry: Preheat oven to 180°C (356°F), brush with egg wash, and bake for 20-25 minutes until golden brown.
- Assemble and Serve: Cool slightly, remove from molds, fill with cheese mixture, and top with curly lettuce before serving.

Notes
For best results, serve warm and ensure the sauce is thick enough to avoid a watery filling that can make the cones soggy.
