  • 1/2 cup Milk Any milk or dairy-free alternative is fine.
  • 1 packet Taco Seasoning Adjust spice level to suit your palate.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  2. In a large mixing bowl, combine shredded chicken, cream of chicken soup, Ro'tel tomatoes, sour cream, milk, and taco seasoning. Mix well until creamy.
  3. Layer half of the crushed Nacho Doritos in the bottom of the prepared casserole dish.
  4. Spoon half of the creamy chicken mixture over the Doritos, spreading it evenly.
  5. Repeat the layering with the remaining Doritos and then add the rest of the chicken mixture on top.
  6. Sprinkle shredded cheese generously over the top layer.
  7. Cover with foil and bake for approximately 35 minutes. Remove foil in the last 10 minutes to allow cheese to crisp.
  8. Allow the casserole to rest for 5 minutes before serving, optionally garnishing with fresh cilantro or jalapeños.
