- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Slice the sweet onions into 1/4-inch rings and toss with kosher salt, dry mustard powder, garlic powder, smoked paprika, and cayenne pepper.
- Layer half of the seasoned onions in the bottom of the baking dish, then sprinkle half of the cheddar and Gouda on top.
- Repeat with the remaining onions and cheeses, then sprinkle Parmesan cheese on top.
- Dot with unsalted butter and cover tightly with aluminum foil.
