Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Slice the sweet onions into 1/4-inch rings and toss with kosher salt, dry mustard powder, garlic powder, smoked paprika, and cayenne pepper.
  3. Layer half of the seasoned onions in the bottom of the baking dish, then sprinkle half of the cheddar and Gouda on top.
  4. Repeat with the remaining onions and cheeses, then sprinkle Parmesan cheese on top.
  5. Dot with unsalted butter and cover tightly with aluminum foil.
  6. Bake covered for 45 minutes, then uncover and bake for an additional 30 minutes until cheese is browned.
  7. Let the dish rest for 5-10 minutes before serving and garnish with fresh parsley.
