- In a large pot, bring salted water to a boil. Add rotini pasta and cook for 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and sprinkle with Cajun seasoning. Cook for 6-7 minutes until golden and cooked through, then set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in chicken broth and heavy cream, stirring until mixture simmers.
- Stir in mozzarella and Parmesan, mixing until melted and creamy. Optionally add cheddar for extra cheesiness.
- Combine cooked rotini and sautéed chicken into the sauce, tossing to coat evenly. Let simmer for 2-3 minutes.
- Remove from heat. Garnish with chopped parsley and serve hot, optionally adding extra cheese on top.
