Step-by-Step Instructions
  1. In a large pot, bring salted water to a boil. Add rotini pasta and cook for 8-10 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and sprinkle with Cajun seasoning. Cook for 6-7 minutes until golden and cooked through, then set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in chicken broth and heavy cream, stirring until mixture simmers.
  4. Stir in mozzarella and Parmesan, mixing until melted and creamy. Optionally add cheddar for extra cheesiness.
  5. Combine cooked rotini and sautéed chicken into the sauce, tossing to coat evenly. Let simmer for 2-3 minutes.
  6. Remove from heat. Garnish with chopped parsley and serve hot, optionally adding extra cheese on top.
