Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine cold mashed potatoes, sharp cheddar cheese, Parmesan cheese, fresh chives, melted butter, all-purpose flour, garlic powder, onion powder, salt, and pepper.
  3. Crack the eggs into a separate bowl and beat them lightly. Then pour the beaten eggs into the potato mixture and stir gently.
  4. Form golf ball-sized portions of the potato mixture and place them evenly on the prepared baking sheet.
  5. Brush the tops of each puff lightly with olive oil.
  6. Bake the puffs for 20-25 minutes until golden brown and crispy.
