- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine cold mashed potatoes, sharp cheddar cheese, Parmesan cheese, fresh chives, melted butter, all-purpose flour, garlic powder, onion powder, salt, and pepper.
- Crack the eggs into a separate bowl and beat them lightly. Then pour the beaten eggs into the potato mixture and stir gently.
- Form golf ball-sized portions of the potato mixture and place them evenly on the prepared baking sheet.
