Step-by-Step Instructions
  1. In a large skillet over medium heat, add 1 pound of ground beef and cook for about 6-8 minutes, breaking it apart with a spatula until it's no longer pink. Drain any excess fat once cooked.
  2. Stir in 1 packet of taco seasoning and 1 can of diced tomatoes (including juice) to the browned beef. Cook for about 3-4 minutes until heated through and fragrant.
  3. Add 2 cups of cooked rice to the skillet, mixing well until every grain is coated. Cook for an additional 2-3 minutes to warm the rice through.
  4. Sprinkle 1-2 cups of shredded cheese evenly over the mixture. Cover with a lid and let it cook for about 2-3 minutes on low heat until the cheese melts.
