  • 2 tablespoons Cornstarch can swap with arrowroot starch
  • 1 teaspoon Kosher Salt or use sea salt
  • 1/2 cup Unsalted Butter room temperature
  • 1/2 cup Light Brown Sugar or dark brown for richer flavor
  • 1/4 cup Granulated Sugar reduce for less sweetness
  • 1/4 cup Honey agave syrup as alternative
  • 2 Large Eggs room temperature
  • 1 teaspoon Vanilla Extract preferably pure
  • 1/2 teaspoon Cinnamon optional
  • 2 cups Powdered Sugar for frosting
  • 1 pinch Flaky Sea Salt for garnish
For the Honey Butter Frosting
  • 1/2 cup Softened Butter not melted
  • 1/4 cup Honey to taste

Step-by-Step Instructions
  1. Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
  2. Whisk together the cornmeal, all-purpose flour, baking powder, cornstarch, and kosher salt in a medium bowl.
  3. Cream the unsalted butter, light brown sugar, granulated sugar, and honey in a stand mixer until light and fluffy.
  4. Add the room temperature eggs and vanilla extract, and beat until smooth and combined.
  5. Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
  6. Portion about ¼ cup of the cookie dough, roll into balls, and flatten slightly before placing on the baking sheets.
  7. Bake for 11-14 minutes until edges are golden and centers are slightly doughy.
  8. While cookies cool, whip together softened butter, honey, and powdered sugar to desired frosting consistency.
  9. Frost cooled cookies with honey butter frosting, drizzle additional honey, and sprinkle with flaky sea salt.
