Method
 

Steps
  1. Drizzle olive oil over chicken thighs and apply smoked chicken dry rub. Allow to marinate for 15 minutes while preheating the grill.
  2. Grill chicken on medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F.
  3. Mix mayonnaise, cream cheese, pimento, cheddar cheese, onion powder, garlic powder, and black pepper in a bowl. Chill for 10-15 minutes.
  4. Assemble by layering lettuce on the bottom half of a brioche bun, adding grilled chicken, pimento cheese, jalapeños, and a drizzle of honey.
  5. Top with the other half of the brioche bun and serve warm.
