- In a large mixing bowl, combine ½ cup of mayonnaise, ¼ cup of Greek yogurt, 1 tablespoon of Dijon mustard, 1 tablespoon of honey, and a pinch of salt and pepper. Stir vigorously with a whisk for about 1-2 minutes until the mixture is smooth and creamy.
- Add 2 cups of shredded rotisserie chicken to the dressing, along with ½ cup of chopped pecans, ½ cup of dried cranberries, and ¼ cup of freshly chopped parsley. Gently fold the ingredients together using a spatula for another 2-3 minutes.
- Select 2 crisp apples such as Honeycrisp or Fuji. Halve each apple and remove the core carefully. Place a lettuce leaf on the cut side of each apple half.
- Generously scoop the chicken salad mixture onto each apple half.
