  • 1 tablespoon Chipotle Chili Powder adjust based on spice preference
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Tacos
  • 8 units Tortillas corn or flour
  • 2 cups Shredded Cabbage
For the Pineapple Salsa
  • 1 cup Pineapple fresh, diced
  • 1/4 cup Red Onion diced
  • 1 unit Jalapeño diced, adjust seeds for spice
  • 2 tablespoons Lime Juice
  • 1 teaspoon Sugar to taste

Method
 

Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, aiming for about 400°F (200°C).
  2. Mix together honey, chipotle chili powder, garlic powder, cumin, olive oil, salt, and pepper until combined.
  3. Marinate the salmon fillets in the mixture for 15 to 30 minutes.
  4. Prepare the pineapple salsa by mixing diced pineapple, red onion, jalapeño, lime juice, and sugar in a bowl.
  5. Grill the marinated salmon for about 4 to 5 minutes on each side.
  6. Flake the salmon into bite-sized pieces after resting.
  7. Grill the tortillas for about 30 seconds on each side.
  8. Assemble the tacos with shredded cabbage, flaked salmon, and pineapple salsa.
  9. Serve immediately with lime wedges on the side.
