Ingredients

For the Cookies
  • 1/2 cup Unsalted Butter Avoid margarine; it alters flavor.
  • 1/4 cup Brown Sugar Light or dark brown sugar works; dark adds a deeper flavor.
  • 1/4 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1.5 cups All-Purpose Flour Spoon and level for accuracy.
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Mini Chocolate Chips Mini chips are preferred for bite-size chocolate bursts.
For the Cheesecake Filling
  • 4 ounces Cream Cheese Needs to be smooth and creamy for easy mixing.
  • 2 tablespoons Powdered Sugar

Equipment

  • Air Fryer
  • Mixing Bowl
  • Electric mixer
  • Baking Tray
  • Parchment paper

Method

Step-by-Step Instructions
  1. Preheat your air fryer to 350°F (175°C) or oven. Line a baking tray with parchment paper.
  2. Cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
  3. Mix in the egg and vanilla extract until fully incorporated.
  4. Whisk together all-purpose flour, baking soda, and salt in a separate bowl. Gradually fold this into the wet ingredients until no dry spots remain.
  5. Fold in mini chocolate chips evenly into the dough.
  6. Blend cream cheese with powdered sugar until smooth and creamy.
  7. Scoop about 2 tablespoons of dough, flatten it, and place 1 teaspoon of cheesecake mixture in the center. Seal around the filling.
  8. Place cookies in the air fryer and bake for 10-12 minutes, watching until edges are golden and centers are soft.
  9. Allow cookies to cool on the tray for 5 minutes before transferring to a cooling rack.

Notes

For best results, keep the cream cheese cold before mixing to avoid leaks in the filling. Chilling the dough can also help with handling.
