- Preheat your oven to 400°F (200°C).
- Line a 10 x 15 baking sheet with aluminum foil and spray with non-stick spray.
- In a small bowl, whisk together sugar and cinnamon. Set aside.
- Place 40 Saltine crackers on the baking sheet in a single layer.
- In a saucepan, combine salted butter and brown sugar over medium heat. Stir until boiling, then stir for 5 more minutes.
- Remove from heat and pour the toffee over the crackers.
- Bake in the preheated oven for 5 minutes until bubbling and slightly caramelized.
- Remove from oven and let sit for a minute or two to settle.
- Sprinkle white chocolate chips over the warm toffee, allowing them to melt.
- Spread the melted chocolate evenly over the toffee layer.
- Sprinkle the cinnamon sugar mixture over the chocolate layer immediately.
- Allow to cool completely before cutting into pieces.
