  • 1/4 cup Fresh Cilantro Substitutes like parsley or mint can be used.

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 pound of peeled and deveined raw shrimp, seasoning with salt and red pepper flakes. Sauté for 3-4 minutes until pink and opaque.
  3. In the same skillet, pour in 1 cup of chicken or vegetable broth and 1 cup of jasmine rice. Stir well and bring to a rolling boil.
  4. Reduce heat to low, cover, and let simmer for 15-20 minutes until rice absorbs liquid and becomes tender.
  5. Uncover and fluff the rice. Stir in juice from 1 lime, 1 can of black beans, and chopped fresh cilantro.
  6. Reintroduce the sautéed shrimp into the skillet, mixing thoroughly and heating for 2 minutes. Serve warm.
