Ingredients
  

Steak Marinade
  • 1/4 cup Olive Oil Can be swapped with neutral oil
  • 2 Fresh Limes Juice and zest
  • 2 cloves Minced Garlic Garlic powder works in a pinch
  • 1 handful Fresh Cilantro Substitute with parsley if preferred
  • Salt Adjust to taste
  • Pepper Adjust to taste
  • 1 pound Flank Steak The star of the dish
Bowl Base
  • 1 cup White Rice Can substitute with brown rice or quinoa
  • 1 can Black Beans Can replace with pinto beans or omit
  • 1 cup Corn Frozen or canned is fine
  • 1 medium Avocado Choose ripe for best flavor
Topping
  • 1/2 cup Cilantro Lime Crema Blend of yogurt or sour cream, lime juice, and cilantro

Method
 

Marinade & Cooking
  1. In a mixing bowl, whisk together olive oil, lime juice and zest, minced garlic, cilantro, and salt & pepper until well combined.
  2. Place the flank steak in a dish or bag and cover with marinade. Refrigerate for at least 1 hour.
  3. Cook rice according to package instructions, typically involving rinsing and boiling with water for about 15 minutes.
  4. Heat a skillet over medium-high heat and sear the marinated steak for 3-4 minutes on each side until cooked to 145°F.
  5. Let the cooked steak rest for 10 minutes before slicing against the grain into thin strips.
  6. Assemble bowls starting with white rice, topping with black beans, corn, and steak slices.
  7. Drizzle the cilantro lime crema over each bowl and add any additional garnishes as desired.
