Ingredients
  

  • 2 cups bread cubes about 4 slices of day-old bread
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon for topping

Method
 

  1. Preheat your oven to 350°F. Grease a muffin tin with cooking spray or butter.
  2. In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until well combined.
  3. Add the bread cubes to the egg mixture, gently folding until the bread is fully coated. Let it sit for about 10 minutes to allow the bread to soak up the liquid.
  4. In a separate bowl, combine the granulated sugar, melted butter, brown sugar, and the additional tablespoon of ground cinnamon to create a crumbly topping.
  5. Spoon the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the cinnamon sugar topping generously over each muffin.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
