In a separate bowl, combine the granulated sugar, melted butter, brown sugar, and the additional tablespoon of ground cinnamon to create a crumbly topping.
Spoon the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the cinnamon sugar topping generously over each muffin.
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
