  • 2 cups Ripe Tomatoes Roma or organic tomatoes recommended
  • 2 cloves Garlic Cloves Minced; use raw for pungency or roasted for sweetness
  • 0.5 small Red Onion Finely diced; green onions can be substituted
  • 1 handful Fresh Basil Chopped
  • 2 tablespoons Extra-Virgin Olive Oil Higher quality recommended
  • 1 pinch Kosher Salt To taste
  • 1 pinch Fresh Black Pepper To taste
For the Bread
  • 1 loaf Italian Style Bread Sliced into ½-inch pieces; can use stale bread
Optional Additions
  • 1 cup Parmesan Cheese Optional; substitute with mozzarella for vegan version

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Gather your ingredients.
  2. Dice about 2 cups of ripe tomatoes and place them in a mixing bowl. Mince 2 cloves of garlic and finely dice half a small red onion, adding both to the bowl.
  3. Chop a handful of fresh basil leaves and add them to your tomato mixture, along with 2 tablespoons of olive oil, a pinch of kosher salt, and black pepper to taste. Stir gently.
  4. Allow your tomato mixture to sit at room temperature for at least 10 minutes.
  5. Slice your Italian style bread loaf into ½-inch thick pieces. Arrange on a baking sheet and drizzle with olive oil. Toast in the oven for about 8-10 minutes.
  6. Remove the toasted bread and rub each slice lightly with a whole garlic clove, then sprinkle with a pinch of salt.
  7. Top each slice with the fresh tomato mixture and serve immediately.

Notes

Store leftover tomato mixture in an airtight container in the fridge for up to 3 days. Toasted bread can be stored in a paper bag for a day or frozen for longer storage.
