Ingredients
  

  • 3 cups diced apples about 3 medium apples, preferably Granny Smith or Honeycrisp
  • 1 cup diced celery about 2 stalks
  • 1 cup red grapes halved
  • 1 cup walnuts chopped
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lettuce leaves for serving optional

Method
 

  1. In a large mixing bowl, combine the diced apples, diced celery, halved grapes, and chopped walnuts.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
  3. Pour the yogurt dressing over the apple mixture and gently toss until everything is well coated.
  4. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve on a bed of lettuce leaves if desired, and enjoy!
