Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pat your fish fillets dry and season with salt and black pepper.
  3. In a medium bowl, combine coconut milk, lime juice, garlic, ginger, and red pepper flakes. Whisk together.
  4. Heat oil in an oven-safe skillet over medium heat. Sauté onions for 5-7 minutes.
  5. Add garlic and ginger to the skillet, stirring for 1 minute. Add the coconut lime sauce and simmer for 3-5 minutes.
  6. Gently place summer seasoned fish fillets into the simmering sauce.
  7. Transfer the skillet to the preheated oven and bake for 12-18 minutes.
