Preparation Steps
  1. Marinate the shrimp by combining melted salted butter, lime juice, lemon juice, and Cajun seasoning in a zippered bag. Add shrimp, seal, and marinate for 30 minutes to 1 hour.
  2. Cook the shrimp in a skillet over medium-high heat for 1-2 minutes on each side until opaque and curled. Remove and let cool.
  3. Prepare the guacamole by mashing avocados and mixing in green chili sauce, remaining lime juice, lemon juice, salt, onion powder, and optional cumin.
  4. Slice English cucumbers into rounds about half an inch thick. Pat dry with a paper towel to maintain crispness.
  5. Assemble bites by placing guacamole on cucumber slices, topping with cooked shrimp, and finishing with remoulade sauce and chives.
  6. Serve immediately on a platter for guests.
