Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
  2. Grate the zucchini, sprinkle with kosher salt, and let sit for 10-15 minutes.
  3. In a food processor, combine flour, baking powder, and baking soda. Pulse for about 10 seconds.
  4. Add cold, cubed butter to the mixture and pulse until it resembles coarse cornmeal.
  5. Fold in cheddar cheese, parsley, and chives. Mix until combined, being careful not to overmix.
  6. Pour in buttermilk and pulse until dough forms clumps.
  7. Drain excess moisture from zucchini and fold into the dough mixture.
  8. Divide dough into about 12 portions and shape into rough balls. Place on the baking sheet.
  9. Bake in the preheated oven for 10-12 minutes until golden brown.
  10. Let cool on the baking sheet for about 5 minutes before serving.
