Ingredients
  

  • 2 cups cottage cheese
  • 1 cup ripe bananas mashed (about 2 medium bananas)
  • 1/2 cup vanilla yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts or pecans optional
  • 1/4 cup mini chocolate chips optional

Method
 

  1. In a large mixing bowl, combine the cottage cheese, mashed bananas, vanilla yogurt, honey or maple syrup, vanilla extract, and ground cinnamon. Mix well until all ingredients are fully incorporated and smooth.
  2. If desired, fold in the chopped walnuts or pecans for added crunch and flavor.
  3. Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
  4. Spoon the pudding into individual serving bowls or a large serving dish.
  5. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the pudding to chill.
  6. Before serving, sprinkle mini chocolate chips on top if using.
