- Add chopped spinach, red bell pepper, green onions, and mushrooms. Fold to distribute evenly.
- Pour the batter into muffin cups, filling them about three-quarters full.
- Bake for 25-30 minutes until golden brown and firm. Check doneness with a toothpick.
- Allow muffins to cool for 5 minutes before transferring to a wire rack to cool completely.
