Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease muffin tin with olive oil.
  2. In a mixing bowl, combine cottage cheese and eggs. Whisk until smooth.
  3. Fold in almond flour, cheddar, mozzarella, garlic powder, salt and pepper until fully absorbed.
  4. Add chopped spinach, red bell pepper, green onions, and mushrooms. Fold to distribute evenly.
  5. Pour the batter into muffin cups, filling them about three-quarters full.
  6. Bake for 25-30 minutes until golden brown and firm. Check doneness with a toothpick.
  7. Allow muffins to cool for 5 minutes before transferring to a wire rack to cool completely.
