Step-by-Step Instructions
  1. In a medium mixing bowl, use an electric mixer to beat cream cheese until ultra-smooth—about 2 minutes. Gradually mix in cumin, crushed red pepper flakes, salt, black pepper, lime juice, and olive oil, then add pressed garlic. Blend until combined and creamy.
  2. Add rinsed and drained black beans and chopped black olives to the creamy mixture. Gently fold everything together using a spatula. Reserve a small handful of black beans for garnish.
  3. Cover bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to meld.
  4. After chilling, give it a gentle stir. Transfer Cowboy Caviar to a serving dish, sprinkle reserved black beans on top, and arrange chopped hard-cooked eggs around the edge. Finish with chopped green onions.
  5. Serve with crispy tortilla chips or corn chips and enjoy!
