  • 2 cups black beans drained and rinsed

  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper any color, diced
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño seeded and minced (optional)
  • 1/4 cup olive oil
  • 1/4 cup lime juice about 2 limes
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red onion, bell pepper, cilantro, and jalapeño (if using).
  2. In a separate small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture and toss gently to combine.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature with tortilla chips or as a topping for tacos or grilled meats.
