  • 1 tablespoon Fresh Lime Juice Can be swapped with lemon juice.
  • 1/4 cup Fresh Cilantro Omit or replace with parsley if not liked.

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add diced yellow onion, carrot, and chopped celery. Sauté for 5-6 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for another minute.
  4. Add 1 teaspoon each of ground cumin, coriander, smoked paprika, thyme, and turmeric. Stir well.
  5. Incorporate 2 cans of black beans, 1 can of diced tomatoes, and 1 can of pumpkin puree. Mix well.
  6. Pour in 4 cups of vegetable broth and bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
  7. Stir in 1 can of coconut milk and heat through for another 5 minutes.
  8. Remove from heat, add lime juice, salt, and black pepper to taste.
  9. Ladle soup into bowls and garnish with cilantro and lime wedges.
