  • 2 cups Cherry Tomatoes opt for fresh, ripe cherry or tiny tim tomatoes
  • 2 cups Yellow Tomatoes substitute with more cherry tomatoes if unavailable
For the Seasoning
  • 2 tablespoons Olive Oil use extra virgin for a bolder taste
  • 1 packet Ranch Seasoning Dry Powder homemade ranch seasoning can be used
  • 2 cloves Garlic can be zested or minced
  • 1 teaspoon Salt adjust according to taste
  • 1 teaspoon Black Pepper freshly ground offers the best flavor
  • 1/2 teaspoon Red Pepper Flakes omit for a milder flavor
To Finish
  • 1/4 cup Chives can be substituted with green onions
  • 1/4 cup Basil fresh is preferred, but dried works in a pinch
  • 1/2 cup Feta Cheese substitute with goat cheese for a different flavor

Method
 

Preparation
  1. Begin by preheating your oven to 375°F (190°C).
  2. Rinse the cherry and yellow tomatoes thoroughly, then cut each in half and place in a large mixing bowl.
  3. In a separate bowl, combine olive oil, ranch seasoning, minced garlic, salt, black pepper, and red pepper flakes. Stir well.
  4. Pour the seasoning mixture over the halved tomatoes and gently toss until evenly coated.
  5. Transfer the seasoned tomatoes to a lined baking sheet, arranging them in a single layer with cut sides up.
  6. Roast for 20-25 minutes until tender and slightly caramelized.
  7. Once roasted, toss with chopped basil, crumbled feta, and chives in a serving bowl.
