  • 8 ounces cream cheese at room temperature
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper for easy removal.
  2. In a mixing bowl, blend the softened cream cheese and butter until they form a smooth and fluffy mixture.
  3. Gradually incorporate the granulated sugar, mixing until the combination is light and airy.
  4. Add the eggs one at a time, ensuring each is fully incorporated before adding the next, then stir in the vanilla extract.
  5. In another bowl, mix the mashed bananas with baking soda and salt until well combined.
  6. Carefully combine the banana mixture with the cream cheese blend, stirring gently until just mixed.
  7. Slowly fold in the flour until the batter is smooth, taking care not to overmix. If desired, add the chopped nuts at this stage.
  8. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula for an even bake.
  9. Bake in the preheated oven for 55-65 minutes, checking for doneness with a toothpick; it should come out clean when inserted into the center.
  10. Once baked, let the loaf cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
